Bean & Sauerkraut Salad
Serves 8
- 1-15oz can green beans, drained
- 1-15oz can cut wax beans, drained
- 1 15oz can Libby's Crispy Sauerkraut,
drained
- 3/4 cup olive oil
- 1 cup diced green pepper
- 1/2 cup diced red pepper
- 1 cup chopped red onion
- 1/2 cup sugar
- Fresh ground pepper
Heat olive oil, sugar, and red onion to
simmer; cool. Pour over all remaining ingredients and stir. Add fresh ground
pepper, if desired. Chill several hours or overnight.
