Potato Salad

• 1/2 lb / 4-5 small red potatoes
• 1/2 lb / 4-5 small white potatoes
• 1/2 cup sliced green onions or chopped shallots or both
• 1 cup sliced celery or jicama
• 2 tablespoons chopped parsley
• 1-2 cups crumbled Bacon
• 3-4 hard boiled eggs
• 1/2 cup chopped Olives

Dressing

• 1 1/2 cups mayonnaise
• 2 tablespoons milk
• 2 tablespoons white vinegar
• 2 tablespoons grainy mustard
• 2 tablespoons yellow mustard
• 2 cloves minced garlic

Hard boil eggs and let cool. Fry bacon to a crisp. make dressing and let it sit while chopping other ingredients. Than Mmx all ingredients together gently.
