Potato Salad

- 1/2 lb / 4-5 small red potatoes
- 1/2 lb / 4-5 small white potatoes
- 1/2 cup sliced green onions or
chopped shallots or both
- 1 cup sliced celery or jicama
- 2 tablespoons chopped parsley
- 1-2 cups crumbled Bacon
- 3-4 hard boiled eggs
- 1/2 cup chopped Olives
Dressing
- 1 1/2 cups mayonnaise
- 2 tablespoons milk
- 2 tablespoons white vinegar
- 2 tablespoons grainy mustard
- 2 tablespoons yellow mustard
- 2 cloves minced garlic
Hard boil eggs and let cool. Fry bacon
to a crisp. make dressing and let it sit while chopping other ingredients. Than
Mmx all ingredients together gently.
